BEST GLUTEN FREE GRANOLA RECIPE

Louie is sure he’s nailed mise en place, a French cooking term translated as “everything in its place.” This means having all of the ingredients prepped before you start cooking. Louie, you gathered the ingredients but you haven’t measured it all out.

And we haven’t talked about why our granola is healthy, yet either.

IS GRANOLA HEALTHY

The main ingredient in this recipe is oats.

Oats are a great source of fiber which keep you full for a long time. The fiber also helps keep your blood sugar stable and can even lower your cholesterol.

OATS
Studies show that adding oats to our diets has many health benefits. These include weight loss, lower blood sugar levels, and a reduced risk of heart disease.
Oats are loaded with important vitamins, minerals, and antioxidant plant compounds.
NUTRIENTS IN OATS
Whole oats are rich in antioxidants
and beneficial plant compounds called polyphenols. Most notable is a unique group of antioxidants called avenanthramides, which are almost solely found in oats
Antioxidants in oats
Avenanthramides
may help oxidative stress by increasing the production of nitric oxide gas. This gas molecule helps dilate (widen) blood vessels, which may lead to better blood flow. In addition, they have anti-inflammatory and anti-itching effects.
Avenanthramides
Oats contain a powerful soluble fiber
called beta glucan, which partially dissolves in water and forms a thick, gel-like solution in your gut.
BETA GLUCAN
OK, that sounds gross but...beta glucan
• reduces blood glucose and insulin response • increases growth of good bacteria in the digestive tract • helps w/ regulation of type 2 diabetes
beta glucan
Oats can lower cholesterol levels
Many studies have shown that the beta-glucan fiber in oats is effective at reducing both total and LDL (bad) cholesterol levels.
beta glucans for the win
Oats can improve blood sugar
randomized clinical trails concluded that adding oat beta-glucan to meals with carbs reduces insulin in the blood

Oats may decrease the risk of childhood asthma
Research indicates that early introduction of oats, for example, may actually protect children from developing asthma.

Oats may help relieve constipation
Oat bran was also shown to decrease gastrointestinal symptoms and aid digestion in people living with ulcerative colitis (UC)

Now that I’ve segued into a disclaimer paragraph:

Pure oats are naturally gluten-free and suitable for most people with gluten-related disorders, such as celiac disease. But they may have traces of gluten, depending on where and how they were processed.

  1. Gluten-free oats should be explicitly labelled and certified as “gluten-free.” These products typically have less than 20 ppm of gluten, which is the legal requirement.
  2. Some oat products have a statement like, “processed in a facility that also processes wheat-based foods.” To minimize the risk of side effects, don’t select these products.

LET'S CONTINUE W WHY THIS IS THE BEST GLUTEN FREE GRANOLA RECIPE

COCONUT FLAKES
The second ingredient in my healthy gluten free granola cereal recipe
Coconut flakes are a relatively calorie-dense food. The nutrition in coconut flakes primarily come from healthy fats which provide sustained energy.
nutrition and coconuts
Coconut meat, water, and oil are high in phenolic compounds
These antioxidants may help protect cells from free radicals, which are unstable molecules that can cause oxidative damage and increase the risk of chronic disease.
coconuts & phytochemicals
According to a 2024 review, the antioxidants in coconut oil have antimicrobial and anti-inflammatory properties that may help:
• promote wound healing • reduce inflammation • maintain skin moisture • support skin barrier function • protect the skin from external substances
2024 review
Lastly, a 2018 test-tube study also found that certain antioxidants in coconut could help protect against DNA damage

Almonds
PISTACHIOS
Low in calories, good source of B6, copper, and antioxidants, and are a complete protein
Pistachios

Brazil Nuts
PEANUTS

Peanuts

Personally, I prefer walnuts, almonds, pistachios or pecans in this recipe. (Pecans don’t make the top nine protein-rish nuts, with 2.6 grams of protein per serving but pecans are a nutritional powerhouse too!

The beauty of this gluten free granola cereal recipe is that you can make it your own w/ choice of nuts / dried fruit.

Let’s look at two more healthy ingredients that answer the question, ‘is granola healthy for you?’

Superstars : chia seeds and quinoa.

In to the oven!
CHIA SEEDS
Chia seeds are tiny black or white seeds derived from the Salvia hispanica plant, a member of the mint family native to Central America. These small seeds have been a part of human diets for over 5,000 years. Chia seeds were a staple food for the Aztecs and Mayans.
When chia seeds are ingested, they form a gel-like substance in the stomach that can increase your feeling of fullness and decrease your appetite and calorie intake.
Benefits of Chia Seeds
• reduce blood pressure • lower cholesterol levels • support digestive health • aid in weight management • reduce inflammation • help to control diabetes • protect against chronic disease • improve anxiety and depression.
Fiber
A one-ounce (28 grams) serving of chia seeds contains approximately 9.75 grams of fiber, which is about 39% of the recommended daily intake.
Chai seed nutrition
Omega-3 Fatty Acids
Chia seeds are an excellent source of alpha-linolenic acid (ALA), a type of omega-3 fatty acid. About 60% of the fat in chia seeds consists of ALA, which is beneficial for heart health and may help reduce inflammation.
For how to add more omega-3s to your diet without cooking, read this article
Protein
Chia seeds provide about 5 grams of protein per ounce, making them a good plant-based protein source. They contain all nine essential amino acids, classifying them as a complete protein.

FYI: A complete protein means that the protein contains all nine essential amino acids, which are amino acids that our bodies cannot produce!

Two plants that are also complete proteins are in my healthy gluten free granola cereal recipe!

Quinoa and Chia seeds!

I love that you shared that fact!

STEM FOR THE WIN!

Beautifully browned. Which brings me to the science portion of this experiment. YES! Making the best gluten free granola cerel recipe means a chemical reaction. (For more about chemical reactions and fun w/ your loved ones, check out my book!)

A word about the chemistry behind the deliciousness!
Okay, two words: MAILLARD REACTION
The Maillard reaction is a chemical reaction between proteins and sugars to create melanoidins, the compounds that give browned food its distinctive flavor.
chemical structure of melanoidins
When our food is heated to a temperature of at least 280°F, a chemical reaction occurs between amino acids (proteins) and carbohydrates (sugars) that causes it to brown.
As they begin to interact with heat, the amino acid proteins produce nitrogen and sulfur atoms that then bond to the existent carbon, hydrogen, and oxygen in the chemical makeup of what we’re heating.
The result is a far more complex flavor profile than with other types of browning, like caramelization, which merely involves the chemical breakdown of sugar until it liquifies and turns yellow and then brown.

You can tell your kids that you’re doing chemistry by showing them the Maillard Reaction!

Okay, maple syrup isn't exactly healthy...

since it contains these beneficial compounds in small amounts. But my recipe has a minimal amount!
It’s a good idea to use maple syrup mindfully and sparingly, as a minimally processed alternative to refined sugars and other sweeteners.

Hi Sue, the recipe looks great! I am wondering about something: does the Maillard reaction involve the creation of AGE’s (advanced glycation end products) that we’ve been warned against? Thank you so much.

Ah. Great post, as always. I have made my own granola and muesli for forever, but I have never put quinoa and chia seeds in my granola. I look forward to trying this recipe. I do add hemp heart to muesli, mostly because I love the flavor. And I eat it with Kefir, which I prefer to yogurt. I also have not added maple syrup but I bet it’s yummy. Love this post!!! Thank you!
